Zucchini Bacon Casserole

Ingredients:

Directions:

  1. Fry bacon in a large skillet until just cooked but not crisp.
  2. Add onion and cook until onion is softened.
  3. Stir in zucchini and tomato sauce; season with salt and pepper. Pour zucchini mixture into a greased 2-quart casserole and sprinkle with crushed buttery crackers and Parmesan cheese.
  4. Cover and bake at 350° for about 30 minutes, until hot and bubbly.
  5. Serves 6.
