Vegan Baked Mac and Cheese

Ingredients:

  • 1/2 cup margarine
  • 1/2 cup flour
  • 3 1/2 cups boiling water
  • 1 1/2 tsp salt
  • 2 tbsp soy sauce
  • 1 1/2 tsp garlic powder
  • 1 pinch turmeric
  • 1/4 cup oil

Directions:

  1. Preheat oven to 350º F.
  2. Cook pasta according to directions.
  3. Meanwhile, melt margarine over low heat in a medium to large saucepan.
  4. Beat in flour with a wire whisk and continue to beat over a medium flame until the mixture (called roux) is smooth and bubbly.
  5. Whip in boiling water, salt, soy sauce, garlic powder, and turmeric, beating well to dissolve the roux.
  6. The sauce should cook until it thickens and bubbles.
  7. Next, whip in oil and nutritional yeast flakes.
  8. Mix some of the sauce with the noodles and put in casserole dish.
  9. Pour a generous amount of sauce on top.
  10. Sprinkle w/ paprika and bake for 15 minutes.
  11. Put under the broiler for a few minutes until cheese sauce gets stretchy and crisp.
