Turkey Fettuccini Marinara

Ingredients:

Directions:

  1. Using 12 inch nonstick skillet coated with vegetable cooking spray, cook turkey slices 2 minutes per side or until lightly browned.
  2. Remove from skillet, keep warm.
  3. Add olive oil, mushrooms, onion, pepper and thyme to skillet; cook and stir for 2 to 3 minutes or until onion is tender.
  4. Stir in fettuccini.
  5. Remive from heat.
  6. Sauce: Place remaining ingredients in food processor; blend until tomatoes are coarsely chopped.
  7. Put in small saucepan; cook and stir over medium-high heat 3 to 5 minutes until thickened.
  8. Top fettuccini with turkey and sauce.
  9. Sprinkle with parmesan, if desired.
