Ingredients:

  • 1/2-3/4 cup good quality chili powder.. mix several kinds
  • 12-15 lb... fresh beef stomach (tripe) yep.. that's right...
  • pigs or cows feet about 3... depending on size.. and yes they sell this in the stores here
  • 2 21 oz cans hominy.. drained
  • 2-3 cloves garlic chopped
  • 1 heaping tbsp comino... (cumin) or more to taste
  • 4 tbsp salt

Directions:

  1. Trim fat form tripe and cut into 1 inch cubes.
  2. Add meat and water to cover and cook over moderate heat for 3 hours
  3. Add onions, salt, spices, cilantro and canned hominy
  4. Add more water if needed
  5. Cook another 2-3 hours
  6. Mixture should bubble while cooking and cook as long as possiable.
  7. Remove feet...
  8. Serve with chopped onions and cilantro and warm tortillas..
  9. Now you can use dried corn... but you have to cook it for 5 hours before... canned is good!
