Sweet Potatoes with Onions and Tomatoes

Ingredients:

Directions:

  1. In a large skillet, saute the onions in the oil until soft. Add garlic, and when fragrant, add the tomatoes and ginger.
  2. Cut the sweet potatoes into 1-inch cubes, and add them to the pan with the cilantro. Add about 1 1/2 cups water to cover, and season with pepper and maybe a pinch of salt.
  3. Cook uncovered for 15 minutes, until the potatoes are tender and the liquid has almost evaporated, stirring occasionally.
  4. Serve hot or cold.
