  1. In a food processor, combine sweet potatoes, yogurt, and curry powder. Mix all ingredients until smooth, and season with salt and pepper, to taste; transfer to a bowl. Garnish with chopped scallions, and serve with flatbread or fresh vegetables, if desired.
