Rhubarb Strawberry Cobbler

Ingredients:

  • for rhubarb sauce
  • 3 cups rhubarb
  • 2/3 cup sugar
  • 1 cup water
  • for cobbler
  • 1 cup sugar
  • 1 cup milk
  • 1/2 tsp baking powder
  • 1 stick of butter

Directions:

  1. For the sauce: combine all ingredients and cook over medium heat until rhubarb is tender. You want some liquid in it (It may take a little over a cup of water).

  3. For cobbler: Melt butter in 9 x 13 inch pan.
  4. Mix the sugar, flour, baking powder together; then add the milk.
  5. Add the flour sugar mixture to the butter in pan (after butter melts).
  6. Add the rhubarb sauce (do not stir)
  7. Add the strawberry slices scattered on top.
  8. Bake in 350 degree oven about 20 minutes or until golden brown.
  9. This is good with vanilla ice cream or you can eat it without.

  11. Note: You will have a better crust if you use the self rising flour plus the 1/2 teaspoon baking powder.
