Quick Orange Chicken Breasts

Ingredients:

Directions:

  1. Carefully slice each chicken breast in half lengthwise so that you have two thin slices (this helps it cook faster).
  2. Place flour, salt and pepper in a bowl.
  3. Roll chicken pieces in flour mixture, shaking off excess flour.
  4. Melt butter over medium-high heat in large nonstick frying pan.
  5. Add chicken.
  6. Cook 2 minutes on each side, until light golden.
  7. Remove chicken.
  8. Reduce heat to medium.
  9. Add broth, orange juice, garlic, Italian herbs and sugar.
  10. Bring to a boil, then simmer for 1 minute or until liquid has reduced a bit.
  11. Add salt and pepper to taste.
  12. Return chicken to frying pan.
  13. Reduce heat and cover.
  14. Simmer for 5 minutes or until chicken is no longer pink inside and sauce has thickened slightly.
  15. Serve garnished with parsley.
  16. Good served with rice.
