Pineapple Whole Wheat Rolls

Ingredients:

  • 8 oz can of crushed pineapple
  • 1 package of active dry yeast
  • 1/3 cup of milk
  • 3 tbsp of brown sugar
  • 3 tbsp of cooking oil
  • 1/4 tsp of salt
  • 2 1/4 to 1/2 cups of whole wheat flour
  • 1/4 cup of honey
  • 1/4 cup of butter

Directions:

  1. Drain the can of pineapple, reserving 1/3 cup of the juice.
  2. Set pineapple aside.
  3. Combine the all purpose flour with the yeast.
  4. Heat the reserved juice with the milk, brown sugar, oil and salt till warm. (115 to 120 degrees)
  5. Add to flour mixture; beat at low speed for 1/2 minute.
  6. Beat at high speed for three minutes.
  7. Stir in pineapple.
  8. Add as much whole wheat flour as you can stir in.
  9. Turn out on floured surface and knead enough of the remaining flour to make a moderately stiff dough.
  10. Place in a greased bowl.
  11. Cover with a dish towel and let it rise in a warm place til double, (about one hour)
  12. Punch down; let rest 10 minutes.
  13. Divide into thirds.
  14. Shape each third into 15 balls.
  15. Place three balls each in greased muffin cups.
  16. Let rise in warm place til nearly double (another 20 minutes or so)
  17. Bake at 375 degrees for 15 minutes.
  18. Combine the honey with the melted butter.
  19. Turn rolls out, brush with honey mixture.
  20. Makes 15 delectable rolls.
