Ingredients:

  • 4 cups zucchini

Directions:

  1. Scrub (clean) zucchini and cut into 1/4 slices
  2. Chop red pepper
  3. Slice onion into thin slices
  4. Cut tomato into small wedges or use cherrie tomatos cut in half.
  5. Saute first 3 ingredients in oil for 5 minutes.
  6. Add tomatos and saute for another few minutes.
