My Favorite Lemon Bread

Ingredients:

  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 cups flour , sifted with 1 tsp baking powder
  • 1/2 teapoon salt
  • 1/2 cup sugar

Directions:

  1. Beat butter, sugar and eggs. Add alternately milk and flour, baking powder, and salt mixture. Add lemon rind.
  2. Bake in loaf pan sprayed with nonstick spray, for 45 minutes at 350.
  3. While bread is hot right from the oven and still in the pan, pour 1/2 cup sugar, dissolved in lemon juice, over the top. Cool on rack.
  4. Delicious sliced thin for tea or made into tyin sandwiches with cream cheese.
