I have been making this lemon bread for years! It so moist and delicious - great with coffee or to add to a brunch buffet. I am sure there are similar recipes out there, but this is my old stand by. Ingredients:
1/2 cup margarine |
1 cup sugar |
2 eggs |
1/2 cup milk |
1 1/2 cups flour, sifted with 1 teaspoon baking powder |
1/2 teapoon salt |
grated rind of 1 lemon |
juice of 1 lemon |
1/2 cup sugar |
Directions:
1. Beat butter, sugar and eggs. Add alternately milk and flour, baking powder, and salt mixture. Add lemon rind. 2. Bake in loaf pan sprayed with nonstick spray, for 45 minutes at 350. 3. While bread is hot right from the oven and still in the pan, pour 1/2 cup sugar, dissolved in lemon juice, over the top. Cool on rack. 4. Delicious sliced thin for tea or made into tyin sandwiches with cream cheese. |
