Ingredients:

Directions:

  1. Preheat oven to 350F/170C/150C Fan/as Mark 3
  2. Beat butter, sugar and lemon rind until creamy
  3. Beat in egg yolks until smooth.
  4. Beat in flour, spice, currants and citrus peel.
  5. Gather mixture into ball and make into a soft dough.
  6. Turn onto a floured board or worktop and roll out to 1/2-inch thickness.
  7. Cut out with a 4 inch / 10cm fluted pastry cutter.
  8. Cut out 20 cookies, re-rolling dough until all is used.
  9. Place evenly spaced on cookie sheet covered with foil or baking parchment.
  10. Bake 15 minutes or until light golden brown.
  11. Sprinkle with sugar while warm.
  12. Cool on wire rack.
  13. For a nice touch, stack a few cookies and tie them with a thin ribbon with a bow on top..
