Ingredients:

  • 1 large onion
  • 1 large green pepper
  • 1 large red pepper
  • 1 lb kielbasa
  • 1/4 tsp ground pepper
  • 1 (15 oz) can diced tomatoes
  • 1 tbsp olive oil
  • 1 cup water

Directions:

  1. Give the onion a medium dice.
  2. Large dice the two peppers.
  3. On medium heat lightly saute onion and peppers in the olive oil till start to soften about 10 minute.
  4. Cut squash in half remove seeds cut into chunks,and peel.
  5. Add chunked squash,tomatoes, water,onions, peppers and ground pepper.
  6. Cover and cook for 5 min to 8 minute.
  7. Slice kielbasa 1/2 inch thick.
  8. Check squash if you can start to break up the chucks with the back of your spoon uncover and add kielbasa.
  9. Continue to cook till kielbasa is hot and most of the liquid is cooked off.
  10. Enjoy.
