Healthy Whole Wheat Bagels (Vegan)

Ingredients:

  • 1 3/4 cups bread flour
  • 2 tbsp vital gluten
  • 1 1/4 cups soymilk
  • 1 egg substitute (either a 'flax egg' or an egg replacer)
  • 2 tbsp butter , vegan
  • 1/4 cup brown sugar (or more if you like a sweeter bread)
  • 1 1/4 tsp active dry yeast
  • 1/2 tsp salt

Directions:

  1. Put all ingredients in the bread machine pan.
  2. Select dough setting.
  3. When machine is done cycling, turn out onto wax paper or a floured surface.
  4. Pull dough apart and shape into bagels, about softball size.
  5. Place them on a greased baking sheet far apart as they will rise.
  6. Brush with olive oil. You can also top with any seasonings you like at this point.
  7. Cover and let rise about one hour. They may double in size.
  8. Bake at 350 degrees for 9-12 minutes or until golden brown.
