Divine Lemon Bread

Ingredients:

  • 1 stick butter
  • 2 eggs
  • 1 tsp. salt
  • 1/2 cup. lemon juice
  • 1/3 +1cup. sugar
  • 1 &1/2cup. flour
  • 1 &1/2tsp. baking powder

Directions:

  1. Cream butter & 1c. sugar, add eggs & mix well.
  2. Stir together dry ingredients & add to butter mixture alternately with lemon juice.
  3. Bake 350F for 1 hour in greased pan.
  4. While bread bakes:
  5. Zest the rind from the lemon & squeeze the juice from the lemon into the remaining 1/3c. sugar, and then stir in the lemon zest.
  6. After bread has cooled, poke holes all over top of bread with a fork or wooden pick.
  7. Pour lemon juice mixture over the top.
  8. Let sit at least 4 hours before serving.
