I love it when something so simple to make tastes soooo incredibly delicious. Ingredients:
1 stick butter |
2 eggs |
1t. salt |
1/2c. lemon juice |
1/3+1c. sugar |
1&1/2c. flour |
1&1/2t. baking powder |
1 lemon |
Directions:
1. Cream butter & 1c. sugar, add eggs & mix well. 2. Stir together dry ingredients & add to butter mixture alternately with lemon juice. 3. Bake 350F for 1 hour in greased pan. 4. While bread bakes: 5. Zest the rind from the lemon & squeeze the juice from the lemon into the remaining 1/3c. sugar, and then stir in the lemon zest. 6. After bread has cooled, poke holes all over top of bread with a fork or wooden pick. 7. Pour lemon juice mixture over the top. 8. Let sit at least 4 hours before serving. |
