  1. Spray a 9 x 13-inch baking dish with cooking spray. Mix the soup, macaroni, chicken chunks, milk, water chestnuts, mushrooms, bell peppers, scallions and 1 cup of cheese in the baking dish. Spread evenly and sprinkle with the remaining cheese. Cover and refrigerate at least 8 hours. Heat the oven to 350°F Uncover the casserole and place it in the oven. Bake for 1 hour, until hot and bubbly.
