Cinnamon Pecan Muffins

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil

Directions:

  1. Preheat oven to 400°F and grease 9 muffin cups.
  2. Half fill the remaining cups with water.
  3. In a large bowl, mix the dry ingredients with a wire whisk.
  4. Mix in the pecans.
  5. In a small bowl, combine the wet ingredients.
  6. Add to the large bowl.
  7. Mix only until mixture is moistened.
  8. Fill muffin cups 1/2 full with batter.
  9. Bake for 20 to 25 minutes.
