Chicken and Fresh Grapefruit Stir-Fry

Ingredients:

Directions:

  1. Peel and section GRAPEFRUIT over bowl; reserve juice.
  2. Drain PINEAPPLE well; reserving juice.
  3. Combine juices and add enough water to equal 1 cup of liquid.
  4. Combine with CORNSTARCH and SOY SAUCE.
  5. Rinse CHICKEN BREASTS and pat dry; remove any excess fat.
  6. Cut across grain into thin strips.
  7. In large non-stick skillet, sprayed with no stick cooking spray, stir-fry CHICKEN with GARLIC in OIL over medium heat for 5 minutes, or until lightly brown.
  8. Add SNOW PEAS and cornstarch mixture; cook, stirring until thickened.
  9. Add grapefruit, pineapple and green onions; heat.
