Chick Pea And Quinoa Saute

Ingredients:

Directions:

  1. Add the quinoa to 2 cups of boiling water and let it cook until done, about 15 min.
  2. Meanwhile saute the onion in the olive oil for about 2-3 minutes in a large pan or wok. Add the garlic and saute for an extra minute. Add the chilli and the spices and continue to saute for 30 sec.
  3. Add the toms. If the mixture seems to dry, add a splash of water. Add the chick peas.
  4. When the quinoa is done, drain it and add to the pan. Mix well and add the peas. Cook for about a minute and add salt and pepper. You could also add Braggs Amino's at this point, it gives lovely flavour.
  5. Add the raisins, almonds and coriander, mix well and you're done!
