Chick Pea And Quinoa Saute |

This lovely Moroccan style quinoa dish really was invented by accident. I didn't have many of the ingredients needed for another dish so decided to improvise and this is the tasty result. It can be served hot or cold. Read more . Hope you like it : ) Ingredients:
1 tablespoon olive oil |
1 onion, chopped |
2 cloves of garlic, minced |
1 medium hot chilli, seeded and minced |
1 teaspoon turmeric |
1 teaspoon ground coriander |
2 teaspoons ground cumin |
1 can of chick peas, drained and rinsed. |
1/2 can of chopped tomatoes |
1 cup of quinoa |
1/2 cup peas |
(dash of bragg's) |
1/2 cup raisins |
1/2 cup almonds |
handful of beansprouts |
small handful fresh coriander, chopped |
salt and pepper to taste |
Directions:
1. Add the quinoa to 2 cups of boiling water and let it cook until done, about 15 min. 2. Meanwhile saute the onion in the olive oil for about 2-3 minutes in a large pan or wok. Add the garlic and saute for an extra minute. Add the chilli and the spices and continue to saute for 30 sec. 3. Add the toms. If the mixture seems to dry, add a splash of water. Add the chick peas. 4. When the quinoa is done, drain it and add to the pan. Mix well and add the peas. Cook for about a minute and add salt and pepper. You could also add Braggs Amino's at this point, it gives lovely flavour. 5. Add the raisins, almonds and coriander, mix well and you're done! |
