Ingredients:

  • 1 cup honey
  • 3/4 cup oil
  • 2 eggs
  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 cup raisins
  • 1/4 tsp salt
  • 3 tbsp milk
  • 1 tsp vanilla

Directions:

  1. Heat oven to 350*.
  2. Grease 13x9 pan.
  3. In lg bowl, combine honey, oil, yogurt and eggs; beat well.
  4. Add flour, baking powder, salt and cinnamon; mix well.
  5. Stir in carrots, nuts and raisins; mix well.
  6. Pour into pan; bake for 35 minutes, until cake tests done.
  7. Cool.
  8. Frosting: Beat cream cheese until smooth.
  9. Add remaining ingredients and beat until creamy, adding more milk if needed.
