Ingredients:

  • 1/2 cup butter or 1/2 cup margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp salt (optional)
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 1/2-2 cups blueberries

Directions:

  1. Grease or line muffin pans. preheat oven to 375. mix butter and sugar until fluffy. add eggs, one at a time. combine flour, baking powder and salt. combine milk and vanilla. alternately mix liquid and dry ingredients. slowly fold in bluerries. spoon into pans and sprinkle tops with granulated sugar. bake for 30 minutes. cool in pans. makes 12 to 18 muffins (depends how full you fill the pan)
  2. Substitution: to make low-fat, use only 1/2 cup sugar, 1/4 cup butter and add 1/4 cup applesauce.
