Packed full of goodies, this is sure to be a favorite. Ingredients:
1 cup honey |
3/4 cup oil |
1 cup plain yogurt |
2 eggs |
1 3/4 cups flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 1/2 teaspoons cinnamon |
1 cup grated carrot |
1 cup chopped nuts |
1 cup raisins |
3 ounces cream cheese, softened |
3 cups powdered sugar |
1/4 teaspoon salt |
3 tablespoons milk |
1 teaspoon vanilla |
Directions:
1. Heat oven to 350*. 2. Grease 13x9 pan. 3. In lg bowl, combine honey, oil, yogurt and eggs; beat well. 4. Add flour, baking powder, salt and cinnamon; mix well. 5. Stir in carrots, nuts and raisins; mix well. 6. Pour into pan; bake for 35 minutes, until cake tests done. 7. Cool. 8. Frosting: Beat cream cheese until smooth. 9. Add remaining ingredients and beat until creamy, adding more milk if needed. |
