Ingredients:

Directions:

  1. Thaw lobster tails; cut around edges of underside membrane with kitchen shears and remove meat from shells.
  2. Cut rock lobster meat into 1/2 inch cubes; set aside.
  3. Cook salt pork in a large saucepan until crisp.
  4. Add onion, celery, green pepper and rock lobster cubes; cook over low heat 3 minutes, or until rock lobster meat becomes opaque and creamy white.
  5. Add potatoes, tomatoes and water; slowly bring to a boil.
  6. Serve piping hot with sea toast or other crisp crackers if desired.
