Ingredients:

Directions:

  1. Preheat oven to 375.
  2. In bowl ,whisk together flour through salt.
  3. In second bowl, whisk egg, egg white, soy milk, applesauce, and vanilla, add zest.
  4. Pour into dry ingredients.
  5. Stir until just mixed.
  6. Spoon batter into muffin tins sprayed with cooking spray.
  7. Bake for 20 to 22 minutes.
