Bacon 'n' Onion Carrots for Two

Ingredients:

Directions:

  1. Place carrots in a small saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until tender.
  2. Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 2 teaspoons drippings.
  3. Saute onion in the drippings and stir in brown sugar and pepper until brown sugar is melted.
  4. Drain carrots; toss with onion mixture.
  5. Top with bacon.
