Bacon 'n' Onion Carrots for Two |

Besides being colorful, this side dish pairs well with most meats…pork, beef or poultry. It's a fitting vegetable for autumn meals. The mild sweet flavor of the carrots is enhanced by the bacon and onion combination. Ingredients:
4 medium carrots, sliced |
2 bacon, strips diced |
1/4 cup chopped onion |
4 teaspoons brown sugar |
1/8 teaspoon pepper |
Directions:
1. Place carrots in a small saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until tender. 2. Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 2 teaspoons drippings. 3. Saute onion in the drippings and stir in brown sugar and pepper until brown sugar is melted. 4. Drain carrots; toss with onion mixture. 5. Top with bacon. |
