Artichoke Spinach Sauce for Pasta

Ingredients:

Directions:

  1. In a large skillet over medium heat, cook bacon until almost crisp.
  2. Drain off all but one tablespoon of the grease (leave bacon in the pan).
  3. Add garlic and cook for about a minute.
  4. Add olive oil, spinach, and artichoke hearts, sauteeing for a few minutes.
  5. Reduce heat to medium-low and stir in cream cheese and mayonnaise.
  6. When blended, stir in romano, parmesan, and mozzarella.
  7. Cook until all the cheeses are melted, stirring frequently.
  8. Season with salt, pepper, or red pepper flakes to taste.
  9. Combine with cooked noodles and serve.
