Tuna and Pepper Panini Melt

Ingredients:

Directions:

  1. In a bowl, mix together the tuna, red pepper, celery, green onions, mayonnaise, yogurt, capers, cumin, pepper, salt and cayenne pepper.
  2. Cut the buns in half horizontally.
  3. Spread the tuna mixture evenly over the bottom half of each.
  4. Sprinkle each evenly with cheese.
  5. Replace the bun tops.
  6. In a nonstick skillet or panini grill, cook the sandwiches over medium heat, pressing often to flatten and turning once (no need to turn if using a panini grill), for about 5 minutes or until crusty and the cheese is melted.
