Ingredients:

Directions:

  1. In a saucepan, bring 2 quarts of water to a boil; turn off heat. Drop beans in water adn blanch for 3 minutes, or until they turn bright green. Strain green beans and plunge them into ice-water bath; drain well and pat dry.
  2. Gently toss beans with sliced mango, baby salad greens and raspberry vinaigrette. Season with salt and pepper if desired.
