I love this salad, it is so summery and so delicious - just make me so happy when I am preparing it, it assures me that it's spring or summer and that it's a nice day and good things are going to happen!! Ingredients:
1 lb fresh green beans, cleaned and snipped |
1 ripe mango, sliced 1/4 inch thick |
4 cups baby greens |
2 tablespoons prepared raspberry vinaigrette dressing |
Directions:
1. In a saucepan, bring 2 quarts of water to a boil; turn off heat. Drop beans in water adn blanch for 3 minutes, or until they turn bright green. Strain green beans and plunge them into ice-water bath; drain well and pat dry. 2. Gently toss beans with sliced mango, baby salad greens and raspberry vinaigrette. Season with salt and pepper if desired. |
