Ingredients:

  • 1 cup flour
  • 1/2 cup quick oats
  • 1/2 cup packed brown sugar
  • 1/2 cup butter
  • 2 (15 oz) cans pumpkin
  • 2 (12 oz) cans evaporated milk
  • 4 eggs
  • 1 1/2 cups sugar
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp clove
  • 1 tsp salt
  • 1/2 cup packed brown sugar

Directions:

  1. Mix first 4 ingredients until crumbly; press into greased 13x9 baking pan.
  2. Bake at 350° for 20 minutes.
  3. While the crust is baking: Beat all filling ingredients in lg bowl until smooth.
  4. Pour into crust; bake for 45 minutes.
  5. Topping: Mix the topping ingredients; sprinkle over filling and bake another 15 minutes until knife comes out clean.
