We like these a lot better than the regular pie, and they're a lot easier to make. Ingredients:
1 cup flour |
1/2 cup quick oats |
1/2 cup packed brown sugar |
1/2 cup butter |
2 (15 ounce) cans pumpkin |
2 (12 ounce) cans evaporated milk |
4 eggs |
1 1/2 cups sugar |
2 teaspoons cinnamon |
1 teaspoon ginger |
1/2 teaspoon clove |
1 teaspoon salt |
1/2 cup packed brown sugar |
1/2 cup chopped pecans |
2 tablespoons butter, softened |
Directions:
1. Mix first 4 ingredients until crumbly; press into greased 13x9 baking pan. 2. Bake at 350° for 20 minutes. 3. While the crust is baking: Beat all filling ingredients in lg bowl until smooth. 4. Pour into crust; bake for 45 minutes. 5. Topping: Mix the topping ingredients; sprinkle over filling and bake another 15 minutes until knife comes out clean. |
