Sweet Potato Casserole

Ingredients:

  • 4 cups yams
  • 1/2 cup sugar
  • 4 egg whites or 1⁄2 cup liquid egg substitute
  • 1/2 tsp salt
  • 1/2 cup brown sugar

Directions:

  1. 1. Preheat the oven to 350°F. Lightly grease (or spray with cooking spray) a shallow 2-quart baking dish.
  2. 2. Combine the sweet potatoes, sweetener, egg whites, salt, and vanilla in a food processor or blender and process until smooth. Spoon into the baking dish.
  3. 3. Stir together the brown sugar, pecans, flour, and margarine in a medium bowl. Lightly sprinkle over the sweet potato mixture. Spray the top with butter-flavored spray and bake until lightly browned, about 30 minutes.
