Sweet and Spicy Italian Chicken

Ingredients:

Directions:

  1. Add smashed garlic to oil. While oil is heating in a large skillet, dry chicken and season pieces with salt and pepper.
  2. Take garlic out and discard. Place chicken, skin side down, into hot oil and let sear until a golden brown. Turn pieces over and repeat.
  3. Take chicken out of oil and add onion, tomatoes, herbs and garlic. Cook until they begin to soften and all the good bits are off the bottom of the pan.
  4. Lay chicken on top of vegetables.
  5. Mix sauce with brown sugar and red pepper flakes, and pour over chicken.
  6. Add mushrooms to the nooks and crannies.
  7. Bring to a simmer, cover, and cook for 2-3 hours. Or until chicken is cooked through and fall-off-the-bone tender.
  8. *You could make this in the slow cooker if you wanted to; just make sure to take the time to brown the chicken before adding everything to the slow cooker. It would then cook all day on low. Also, you would probably want to add a bit of broth to the mix so dinner doesn't burn.
