Super Simple Linguica And Potatoes

Ingredients:

  • 1 tbsp olive oil (about - you can get away with less if using regular linguica, but will need a good tbsp if going for the lower fat turkey linguica as there will be much less drippings)
  • 1/2 cup onion, diced
  • salt & pepper to taste

Directions:

  1. Heat oil in a large skillet over medium heat.
  2. Add potatoes, linguica and onions and cook, stirring occasionally, until potatoes are done - about 20 minutes.
  3. Season to taste with salt & pepper.
  4. (I told you this was super simple...)
