Super Simple Linguica And Potatoes |

Linguica, a Portuguese sausage, is sliced and sauteed with chunks of potato and onion for a flavorful side dish...or main, if you like! My Mom used to make this often, either stovetop or wrapped in foil and tossed on the grill. Read more . These days you can find turkey linguica for less fat, but there will be less drippings on the potatoes so I sometimes add some paprika for color, as regular linguica dripping will turn the potatoes somewhat orange. Ingredients:
1 tbsp olive oil (about - you can get away with less if using regular linguica, but will need a good tbsp if going for the lower fat turkey linguica as there will be much less drippings) |
3 large potatoes, peeled and diced |
1 lb. linguica, sliced |
1/2 cup onion, diced |
salt & pepper to taste |
Directions:
1. Heat oil in a large skillet over medium heat. 2. Add potatoes, linguica and onions and cook, stirring occasionally, until potatoes are done - about 20 minutes. 3. Season to taste with salt & pepper. 4. (I told you this was super simple...) |
