Stuffed Baby Portabello Mushrooms

Ingredients:

Directions:

  1. Remove stems from mushrooms (DO NOT RINSE MUSHROOMS)
  2. Chop about 10 stems very fine
  3. In frying pan, heat olive oil and then add chopped stems, onion, pepper & garlic (also spinach if using).
  4. Add pepper flakes, herb de provence, paprika, and parmesan cheese
  5. Season with salt & pepper to taste (not too much salt-healthy remember)
  6. Saute till tender
  7. Remove to mixing bowl and add bread crumbs and mozzerella.
  8. In a 13 x 9 baking dish, spray lightly
  9. Stuff each cap with stuffing and place in pan
  10. Bake uncovered in 350 oven for 20-30 minutes or till mushrooms are tender.
  11. That's it. Enjoy!!!
