  1. Place balsamic vinegar in bowl. Add salt, garlic, and pepper then whisk. Pour in oil and continue to beat. Put in tomatoes and onions in mixture. Let soak for 3-4 minutes. Plate rinsed spinach and top with mixture. Garnish with avocado.
