Spinach and Blue Cheese Frittata

Ingredients:

  • 2 medium eggs
  • 2 1/4 oz raw spinach
  • 1 oz shallots
  • 1/3 cup 2% milk
  • 2 tbsp blue cheese
  • 1/4 tsp marjoram
  • 1/4 tsp thyme
  • 1/4 tsp tarragon
  • 1/4 tsp black pepper

Directions:

  1. Saute shallots in cooking spray until tender, add spinach and saute until wilted. Beat together eggs and milk, add blue cheese, vegetables and seasonings. Bake at 350 until set, about 20 minutes.
