Easy breakfast and tasty breakfast under 200 calories. Ingredients:
2 medium eggs |
2 1/4 ounces raw spinach |
1 ounce shallots |
1/3 cup 2% milk |
2 tablespoons blue cheese |
1/4 teaspoon marjoram |
1/4 teaspoon thyme |
1/4 teaspoon tarragon |
1/4 teaspoon black pepper |
Directions:
1. Saute shallots in cooking spray until tender, add spinach and saute until wilted. Beat together eggs and milk, add blue cheese, vegetables and seasonings. Bake at 350 until set, about 20 minutes. |
