Ingredients:

  • 1 medium onion, chopped
  • 1/4 cup plus 2 tbsp bacon drippings
  • 1 (14 1/2-oz) can hominy, drained
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/4 tsp pepper

Directions:

  1. Sauté onion and green pepper in bacon drippings in a large skillet until tender. Add tomatoes; cook over medium heat 15 minutes. Add remaining ingredients; cook an additional 15 minutes, stirring occasionally.
