Ingredients:

Directions:

  1. Spray a large saucepan with cooking spray.
  2. Add oil and onions; saute over medium heat for 3 minutes.
  3. Add all remaining ingredients except for parsley; bring to a boil.
  4. Simmer, covered, for 15 minutes, or until vegetables are tender.
  5. Add more water if soup is too thick.
  6. Garnish with parsley.
