Lentil Vegetable Soup

Ingredients:

  • 2 tsp olive oil
  • 3/4 cups onion
  • 1 1/4 cups celery
  • 1 3/4 cups zucchini
  • 2 cups carrots
  • 3 cups cabbage
  • 7 cups water
  • 6 cups tomatoes
  • 1/2 cup lentils (raw )

Directions:

  1. Saute onions, celery, zucchini & carrots in olive oil for about 5 minutes
  2. Drain canned lentils and add to pot
  3. Add entire can of diced tomatoes
  4. Add water and bring to a boil
  5. Turn down heat and simmer for 20 minutes
  6. Add cabbage (a little more water if needed) and continue simmering until cabbage is tender - approx. 45 minutes more
