Ingredients:

Directions:

  1. In the bottom of a crock pot, place carrots, celery, onion and oil. Add the salsa, lentils and salt.
  2. Pour boiling water over all.
  3. Set crock pot to cook for 6 hours.
  4. Before serving, stir in spinach. Cook about 10 minutes more or until spinach is wilted.
