Simple Split Pea Soup

Ingredients:

  • 1 1/2 cups yellow split peas
  • 4 1/2 cups water
  • 1 1/2 tsp. salt
  • 1 tbsp. cumin seeds
  • 1/2 tsp. turmeric
  • 1/4 cup olive oil

Directions:

  1. Wash peas in a sieve until water runs clear
  2. Place in a medium pot with water and tumeric and bring to a boil
  3. Lower heat as low as you can to retain a very slow simmer for 1 hour
  4. Mash in the pot with a potato masher or use a immursion blender, to a smooth concistency
  5. Add salt to taste and keep warm
  6. In a small skillet, heat oil over medium heat, add cumin and crushed pepper, cook for 3 minutes, careful not to burn
  7. Stir oil and spice mix into soup and serve
