Salsa Corn Cakes

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup cornmeal
  • 1 tsp. salt
  • 3/4 of 8 oz. package of cream cheese (or 2-3 oz. package.)
  • 6 eggs
  • 1 cup milk
  • 1-15 oz. can corn, drained
  • 1/2 cup salsa

Directions:

  1. In mixing bowl, combine first 4 ingredients
  2. In another mixing bowl, beat cream cheese and eggs
  3. Add milk and butter
  4. Add dry ingredients until just moistened
  5. Fold in corn, salsa and scallions
  6. Pour batter by 1/4 cupfuls onto hot greased griddle
  7. Flip when bubbles form on top
  8. Cook until golden
  9. Serve with sour cream and salsa
