These are great with Baked Taco Chicken and rice. Ingredients:
1 1/2 cups flour |
1/2 cup cornmeal |
1 tsp. baking powder |
1 tsp. salt |
3/4 of 8 oz. pkg of cream cheese (or 2-3 oz. pkgs.) |
6 eggs |
1 cup milk |
1/4 cup butter, melted |
1-15 oz. can corn, drained |
1/2 cup salsa |
1/4 cup scallion, minced |
sour cream and salsa to garnish |
Directions:
1. In mixing bowl, combine first 4 ingredients 2. In another mixing bowl, beat cream cheese and eggs 3. Add milk and butter 4. Add dry ingredients until just moistened 5. Fold in corn, salsa and scallions 6. Pour batter by 1/4 cupfuls onto hot greased griddle 7. Flip when bubbles form on top 8. Cook until golden 9. Serve with sour cream and salsa |
